
Yesterday while reading some of my favorite blogs I came across a delightful recipe for a hot chocolate from Kimi at The Nourishing Gourment. As soon as I read the recipie I knew that is would taste delicous with my oatmeal chocolate chip cookies. I didn't have all the the ingedients that Kimi used so I had to modify it alot. I made this while the rain was pouring down and my girls were contentedly making freindship braslets in our dinning hall. A perfect day for hot chocolate.
Creamy Hot Chocolate
1 Can Whole Fat Coconut Milk
3 Cups Water
3 TBS Cocoa Powder
1/4 Cup Honey
1 tsp Vanillia
Bring the coconut and water to a low boil. Add the honey and slowly whisk in until it dissolves. Whisk in the cocoa powder one tea spoon at a time. Remove from the heat and add the vanilla. If you're in the mood for mint add a few drops of peppermint oil. Best enjoyed on a raining day in front of a warm fire with a good book!

Laura, it is so good, you won't regret trying it. It is also good made with raw milk instead of the water and coconut milk but I like the coconut milk much better. I'm the the one that bought your baskets buy the way! :)
