Spring Green Stir Fry


Last week when I went to the organic farm near me I was thrilled with the assortment of fresh veggies they had available! I love how fresh vegetables are when you buy them locally grown. Nothing can beat a veggie fresh from the garden. I'm looking forward to making more stir frys in the near future!

Spring Green Stir Fry

4 zucchinis, cut length wise and then in small pieces
1 yellow onion, thinly sliced
3 small California chilies
2 cups of broccoli
1 handful of dandelion greens
4 cloves crushed garlic
2 TBS olive oil
Thinly sliced left over meat
Salt and pepper to taste

1. Heat one tbs of olive oil in your skillet and cook the onions for about three minutes until slightly soft. Stiring frequently so that the onion doesn't burn.

2. Add remaining veggies, garlic and the second tbs of oil. Cook until vegetables are soft, stiring frequently.

3. While the vegetables are cooking thinly slice your left over meat and add to stir fry. Cook until heated through. Salt and pepper to taste.

Now you have a yummy, filling and fresh stir fry! Enjoy with a slice of hearty bread and butter.
