Two Yummy Chocolate Treats

I love chocolate! Who doesn't? Well my cousin Ashley is one, go figure my family took her to the Hershey's Factory in Oakdale, CA years ago when she visited. We thought about disowning her until she reminded me that I'm the weirdo that doesn't like cheese. There I go off on a rabbit trail. Needless to say I love chocolate. Unfortunately it's not one of those foods that you can eat too often, even the organic kind. So here is what I want to do when I am craving chocolate but don't wan to break out the candy bar. I make yummy treats out of cocoa powder and coconut milk or coconut oil. Coconut oil and milk are so  good for you! I'm planing on talking about the benefits of coconut oil and milk in a later post. I was out of my oil for a few weeks, I finally got my new gallon in the mail a few days ago from Mountain Rose Herbs. There I go off on a rabbit trail again. Here is my twist on a couple yummy chocolate coconut treats! Enjoy! I originally shared this recipe back in January.







Creamy Coaco Coconut Milk

1 Can Whole Fat Coconut Milk
3 Cups Water
3 TBS Cocoa Powder
1/4 Cup Honey (maple syrup or palm sugar would work as well)

1 tsp Vanilla

Bring the coconut and water to a low boil. Add the honey and slowly whisk in until it dissolves. Whisk in the cocoa powder one tea spoon at a time. Remove from the heat and add the vanilla. If you're in the mood for mint add a few drops of peppermint oil. Put in the fridge and allow to cool.





For those hot summer days this is how I like to enjoy this recipe.  They remind me a little of Fudgesicles


Chocolate Popsicles


Make the recipe above. Once cool for into your popsicle trays and freeze until solid. Eat fast, they melt quick!

  2. This sounds so yummy! I love chocolate and coconut milk! I've made a drink similar to this before but have used carob instead. And an icy pole recipe too? I can't wait till summer to try this (which is mere 5 months away but hey!) Thanks for sharing your recipes at Two For Tuesdays!

  4. oh, I'm with you on chocolate - I LOVE it! I love your idea of using coconut milk. And your idea of freezing it - I never thought of making Popsicles out of hot chocolate! Sounds wonderful!
