Need a quick and easy salad to make when it's just been one of those days, despite meal planing? This is one of my new favorites. It is a Mexican fiesta in your mouth, busting with flavor, texture and protein. I threw this together with what I had, so anything will work really. It makes me think of Chipotle's Burrito Bowl but better. No I'm not bit batiste. I don't have any measurements so just feel free to throw in whatever you have, it's sure to be good!
Fiesta Salad
Fresh Greens
Black Beans
Barley
Sliced Chicken Breast or Thigh
Tortilla Chips
Purple Onions
Tomatos
Avocado
Cortido
Cilantro
Salsa

ReplyDeleteMelynda- No, I don't normally keep cooked barley on hand, I just had it so I decided to throw it in. Not a bad idea though, I might start doing that!. :)
